This one is for all those ice cream lovers out there. It’s something I love eating all year round, not just a summer crush! But let’s be honest, it can be laden with calories, so here’s my tried and tested, super quick and easy healthy alternative.
Banana Ice Cream
Prep-Time 15 minutes
Overnight freeze
Serves 4
Base Ingredients
4 ripe bananas
1 teaspoon vanilla extract
Pinch salt
Milk or natural yoghurt – optional
How to
- Peel and cut bananas into large pieces, then freeze overnight in an airtight bag or container.
- Remove from freezer, add banana pieces into the blender, adding a pinch of salt and 2-4 tbsp milk or natural yoghurt for smoother blending.
- Whizz until you achieve a soft-serve texture, serve immediately or transfer to a container and freeze until a later date. ENJOY!
Other flavour combos for those adventurous types
Mint Chocolate Chip: Add 1 tsp pure peppermint extract and stir in chocolate chips or cacao nibs after blending. Optional, blend in a pinch of spirulina or a small handful spinach for an extra nutrient boost.
Peanut Butter: Add 2-3 tbsp peanut butter or another nut butter before blending.
Very Berry: Add 1 cup frozen berries of choice before blending.
Strawberry: Use 2 bananas. Blend in ½ cup frozen strawberries and optional shake of cinnamon.
Pina Colada: Add ½ cup canned coconut milk. Blend in ½ cup frozen pineapple. Stir in shredded coconut for added texture.
Vanilla Bean: Use 3 bananas and a pinch of salt. Add 1 tsp vanilla bean paste.
Pistachio: Add 2-3 tbsp pistachio butter and sprinkle crushed pistachios on top if desired.
