The lightest, fluffiest, and most filling pancake ever eaten, and I’ve eaten a lot! Low carb, low fat and packed full of protein. With pancake day looming give this healthier option a go. Time to get flipping!

Ingredients
40g vanilla protein powder (I used Awesome Supplements)
1 ripe banana, chopped
2 large eggs
1 teaspoon cinnamon
Pinch salt
How to
- Separate the egg yolks and whites into 2 bowls.
- Beat the whites for 2-3 minutes until soft peaks form.
- Gently fold the other ingredients into the whites.
- Lightly oil a non-stick pan, place on a low heat, add mixture when hot. Cook for 1-2 minutes on each side.
- Serve immediately with natural yoghurt, blueberries, and a drizzling of runny honey. Delicious!
