Soooo many protein bars are packed full of whole nuts, chopped nuts, ground nuts, nut butters (I could go on…) I thought it was time to share my soft and chewy choccy fav. I eat these straight from the freezer just to make them last longer. Yes, they really are that GOOD!
Prep-Time 30 minutes
Yield 10-12 bars
Ingredients
2 cups of oats
8 soft medjool dates, pitted
¼ cup water
3½ tbsp chocolate/vanailla protein powder (I used vanilla Awesome Supplements or Phd Performance Nutrition works well)
2 tbsp maple syrup (or agave)
1 tsp vanilla extract
½ tsp orange extract (peppermint works well too)
¼ tsp salt
Coating:
1¼ cups melting dark chocolate of your choice
¼ tsp orange extract (same as used in filling)
Pinch of salt
1 tbsp coconut oil (optional)
How to
- Whizz all ingredients in a food processor until it forms a dough. Transfer into a parchment lined tin and firmly press flat. I used 3x5inch. Freeze until firm.
- Melt chocolate in a bowl over a boiling pan of water. Stir in additional coating ingredients and leave to cool slightly.
- Pour coating over dough mixture. Leave to set in the fridge.
- Cut into little bars and keep in the fridge or freezer.
