Quick & easy, no fuss, no mess, no artificial sugar, high protein, everyone loves them (even the kids!), delicious date squares = WINNER!

Total Time 10 minutes + 30 minutes refrigeration
Makes 16 squares
Stumbled across this recipe today whilst scrolling through rather too much social media waffle, every cloud! So, raided the cupboards whilst the kids were happy playing for the first time today and BOOM…. done and dusted in 15 minutes. I did substitute a few ingredients but that didn’t appear to matter. Add in your favourite nuts or seeds, free style with this recipe!
They are also great to store so it doesn’t matter if you make way too much, these really are little ‘golden nuggets’!
Ingredients
250g pitted dates (I cut mine into small pieces and soaked them in boiling water for a few minutes to soften)
1 x cup pumpkin seeds
2 x tbsp coco powder
1 x tbsp of local honey (add more if mixture is too dry)
1 x cup peanut butter (crunchy or smooth, you choose)
1 x cup oats
½ cup mixed nuts
Pinch of salt
How to
- Add all ingredients into a food processor and whizz until the mixture starts to clump into a ball
- Place mixture onto a baking sheet lined with parchment paper. Use your hands to firmly press mixture onto the tray
- Refrigerate for 30 minutes then cut into squares
- Enjoy these snacks cold or frozen. Store in an air-tight container in the fridge or freezer
