Apricot Seed Bars

Who says healthy treats can’t be as delicious as a chocolate digestive?! Give these bars a go and see what you think.

Ingredients

140g dried apricot

40g oats

40g desiccated coconut

25g sunflower seed

1 tbsp sesame seeds

15g dried cranberries

3 tbsp hemp protein powder (optional)

1 tbsp chia seeds

 

How to

Purée apricots in a food processor with 150ml boiling water and the oats, then scrape the mixture into a bowl.

Toast coconut, sunflower and sesame seeds in a non-stick pan over a low heat until lightly crisp.

Stir the cranberries, hemp powder and chia seeds into the apricot mixture to make a thick paste.

Add toasted coconut and seeds.

Wrap tightly in cling film, chill for 30 minutes +, then slice to serve.

Theses bars will keep in the fridge for 2 weeks so no need to eat them all in one sitting!
